Ingredients

  • 1/2 cup heavy whipping cream cold
  • 1 1/2 cups plain whole-milk Greek yogurt
  • 1/2 cup canned pumpkin puree 100% pumpkin, not pumpkin pie mix
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice or ground cinnamon
  • 1/4 teaspoon ground cinnamon for sprinkling

Method

  1. Wash your hands. In a medium bowl, beat the cream with an electric mixer until soft peaks form, 2 to 3 minutes.
  2. In a second bowl, whisk the yogurt, pumpkin, vanilla and pumpkin pie spice until smooth. Taste, and add a no-calorie sweetener if you like.
  3. Gently fold the whipped cream into the pumpkin mixture until no streaks remain.
  4. Divide among 4 small cups or jars, cover and refrigerate for 2 hours, until cold and lightly set.
  5. Sprinkle with cinnamon just before serving.

Notes

About 6 g net carbs per serving, with no sugar or sweetener added; any sweetener you add is not included in the nutrition. Adapted from Clemson Cooperative Extension's Greek Yogurt Pumpkin Pie Mousse, with whipped cream instead of sugar-free pudding mix and whipped topping. For less saturated fat, whip 1/4 cup cream (about 5.5 g instead of 9 g per serving). Refrigerate leftovers, covered, and eat within 3 to 4 days.
